Quinoa Greek Salad for One


Quinoa Greek Salad — Get Fit Central Bucks — The Doylestown Food Co-op

INGREDIENTS:

  • 1/2 cup cooked quinoa
  • 1 tablespoon red onion, diced
  • 1 tablespoon bell pepper, diced
  • 6 cherry tomatoes, cut in half
  • 5 Kalamata Olives, diced
  • 1/2 cup cucumber, cubed
  • 1/4 cup feta crumbles 

Dressing:

  • 3 teaspoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon oregano
  • salt and pepper to taste

DIRECTIONS: 

  1. In a medium bowl combine quinoa, vegetables, and feta crumbles.  
  2. Whisk together dressing ingredients in a separate bowl.  
  3. Pour dressing over quinoa salad, toss to coat.
