I learned a lot about Maria South, pig farmer, of Rabbit Run Farm in Telford, PA during my visit but here’s what stands out for me: Maria is a serious and passionate animal lover.
She was completely vegetarian at two different times in her life. Her most recent round of eating strictly vegetarian was several years ago, just prior to beginning the current farming business that she works with her husband, Peter Gallagher.
Maria said at some point she realized she missed eating meat, and knew if she returned to a diet that included meat, it had to be on her terms. She had to be connected to the process. So she chose to raise one pig, and at the right time, engaged in a three-day process of honoring the cycle of life and using every part of the animal. The meat, she says, was delicious. She shared it with family and friends. A year later husband and wife created a business around their commitment to raising pigs in a kind and natural way and offering the highest quality pork products.
As we sat sipping sipping ginger turmeric tea together and I listened to her story, Maria’s authenticity shined through. I completely understood the meaning behind her words when she said, “First and foremost I’m an animal lover; and I want to eat meat. In my mind it fits together perfectly.” And, I also understood her passion when she says, “Let me grow a pig for you – it will change your life.”

You will have the opportunity to sample some delicious Rabbit Run treats two different times during the month. During our Fun First Friday on March 6, from 4:30 – 6:30, enjoy baked fresh ham, sliced and served on a baguette. On March 21, from 12 – 3, Maria will be serving cold, English style pork pies with mustard.
