*All Ingredients Found @ the Market*
- Organic Swiss Chard
- 1/2 Organic Red Onion
- 2 Organic Yukon Potatoes
- 1 tsp. Olive Oil
- 3 Local Free Range Roundtop Eggs
- Klein's Mozzarella (optional)
- Cut chard along the stem, and dice into small sections. Thinly slice red onion and yukon potatoes. Pour oil into the pan on a medium heat, and put in chard, onion, and potatoes. Season as desired. Cook until potatoes are browned and chard is sauteed. In a separate bowl, whisk the eggs and pour over the rest of the ingredients in the pan. Cook to desired texture & serve!
- (optional) slice local mozzarella into squares and place on top of whisked eggs.
