- Baby Spinach
- Sunflower Seeds
- Sliced Strawberries
- Sliced Green Onions
- Cooked Quinoa
- Crumbled Feta (optional)
(Christina Maser's Jam Vinaigrette Dressing)
- 1⁄4 cup Christina's Pantry Jam
- 1/3 cup vinegar
- 1/3-cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon brown or Dijon mustard
- 1⁄4 teaspoon salt
Requires: 1 Mason Jar or similar container.
Combine all cleaned / sliced ingredients in this order from bottom to top: Dressing, cooked quinoa, sliced strawberries, feta, green onions, spinach leaves. Dressing on the bottom prevents the salad from becoming soggy!
For the dressing, combine all ingredients into a shaker and shake vigorously until all ingredients are incorporated. Heat method: In a small saucepan or microwave-safe bowl gently heat jam to melt...be gentle! Remove from heat; transfer to bowl. Whisk all ingredients together. Makes about 1 1/4 cups.
