Kendall Bajek, proprietor of Empanada Mama – a healthy fast food takeout restaurant in the heart of Doylestown – is a shining star young entrepreneur in my book. In business for a year, I was there opening day to sample a number of her amazing empanadas and have remained a loyal return customer since.
Have you noticed that no one else is offering empanadas anywhere in or around town? The uniqueness of the product is not the only aspect of the business that sets it apart. Kendall comments, “What’s special is the amount of care and quality that goes into each empanada, and then there’s the speed – people know they can get in and out in about five minutes.”
Plans for expansion are already in the works. A second location is anticipated to open in Newtown before the winter. Kendall says Newtown is a perfect location. “I know the demographic. I think it offers the right combination of family dining and corporate. We have a lot of offices that like the individualized lunch packs rather than having a large party tray where everyone has to go to the table in the middle of the meeting. A lunch box allows people to stay seated, and everything is in front of them.”
How did the idea for an empanada business come to be? Kendall always knew from a young age she wanted to open a restaurant. When traveling through South America after graduating from college, she ate different foods and was always excited to try her hand at cooking them. Yet, at the same time, she had no idea she was going to start making empanadas. “In my mind I thought someday I would open a high-end French café, very small, with a bar.”
And I guess then this young entrepreneur, inspired by good food and a range of culinary delights, will go onto her next adventure.
