Assuming you have your pantry stocked with good winter staples and spices, here is a wonderful winter recipe to add to the arsenal. It has been sitting in my recipe folder for years so I am no longer sure where it came from, but it’s delicious and very satisfying.
Brown Rice Pudding
1 cup brown rice (uncooked)
4 cups water or 3 cups water and 1 cup apple juice
¼ - 1/3 cup tahini (to taste)
½ cup raisins
2 eggs lightly beaten
2 TBS honey
½ tsp vanilla
¼ tsp cinnamon
2 pinches salt
¼ tsp nutmeg
Wash rice thoroughly in cold water.
Bring to a boil with salt and 3-1/2 cups water. Let boil for a few minutes – simmer covered for 40 minutes.
Dilute tahini in ½ cup water, adding water a little at a time and mixing quickly with a fork until creamy.
In covered baking dish combine rice, tahini and other ingredients except nutmeg, mixing well. Sprinkle nutmeg on top.
Bake at 350 degrees for 20 minutes, removing the cover for the last 5 minutes.
